I never cared for public speaking, isn't that the #1 fear, besides death. Put me behind the scenes, please. I got over it some how, and I get a rush when I conduct cooking demostrations. I love connecting with people and sharing information.
Last week we had a successful demo for the Spring Beauty Day event hosted by Pooka Pure and Simple. (I <3 there body scrubs). The three salads that I made were (there was none left by the end of the day!)
1. Cornbread Salad
2. Signature Salad
8 ounces mixed greens
2 cups red grapes, sliced in half
2 pears, peeled, cored, and diced
2/3 cup dried cranberries
½ cup shelled pistachios
2 ounces gorgonzola cheese*
Sherry Shallot Vinaigrette:
1 medium shallot, minced
1 clove garlic, minced
½ teaspoon salt
¼ teaspoon freshly ground black pepper
¼ cup sherry vinegar (if you can’t find sherry vinegar, substitute red wine vinegar)
½ cup olive oil
Instructions: 1. To prepare the salad, combine all salad ingredients in a large bowl. 2. Combine all dressing ingredients through the vinegar in a small bowl and whisk to combine. Whisking constantly, slowly pour olive oil into the vinegar mixture in a steady stream. Pour over salad and toss to combine. Serve immediately.
Diva Tip: Feta is a good substitute if you don’t like gorgonzola
Inspired by the Cosi Signature Salad
3. Quinoa (pronounced "KEEN-wah")Apple Leek Salad
1 cup of quinoa
2 cups of water
1tsp of vanilla extract
1-2tbsp of honey
The juice of one lemon (or lime)
3 1/2 cups of greek yogurt
1/2cup of dried cranberries
2 apple, diced
1 leek, chopped, using white and light green parts.
1/2cup of walnuts
Bring one cup of quinoa and 2cups of water to a boil. Then, cover and simmer for 15minutes. Once it is cooked, set aside for 10min. to cool or, preferably, chill in refrigerator.
Meanwhile, Add juice of ½ a lemon, honey and vanilla extract to greek yogurt and stir.
Place apples in a medium mixing bowl and coat apple pieces with other half of lemon (or lime).
Add leeks, dried cranberries and walnuts to apples. Then, mix in yogurt mix to apple mixture. Add yogurt/apple mix to chilled/cooled quinoa and blend together. Serve cold.
